John and Ian Wilmot have always been dreamers, as they grew their paths diverged greatly, from each other and from their initial plans. Now, their paths and dreams have converged into one vision: Food and Beer that are quite literally made for each other. We have recently opened BW Kitchen in Woodstock, located inside of Stout Brothers Beer and Coffee Market on the Woodstock square. Once we have established ourselves and created a raving fan base we plan to open a Brewery and Resturaunt, combining an excellent commercial brewery with a top notch kitchen, housed in a non-pretentious, welcoming atmosphere.
Ian has studied brewing, distilling, wine-making and all other things involved with alcohol for his entire adult life. A certified Cicerone and soon to be a certified Sommilier, the man is a walking repository of knowledge of all things alcoholic. Having worked in every sector of the industry from brewery production to restaurant management and even into sales, Ian comprehensive experience seeing the products he produces going from raw all the way to the shelf in your favorite spot.
He has personally overseen the entire production of every beer the brewery has produced and has a secret notebook with literally hundreds of flavor ideas and plans to topple the world... of brewing.
John Wilmot is a classically trained chef also from Atlanta. He has also studied alcohol and it's nuances much of his adult life. John's background was originally in computer science, but was changed to cooking in 2007. Since then he as been a force of nature, competing, cooking, learning and brewing. John has worked with several chefs in many different capacities, and has served as the head chef for all of the beer dinners held by the brewery.
John is the executive chef of the operation, and as such leads the team when drinks are paired with food. With his formal training and experimental attitude, John pushes the food far beyond the typical "bar food" served with beer.
